Just like any country, China's regions and provinces have differing cuisines. Shanghai cuisine tends to be on the sweet side. Dongbei tends to have heartier food, which is well suited for the chilly climate. Below, you will find a guide to China's cuisine provinces.
东北 Dōngběi - Northeast. Includes Liaoning, Jilin and Heilongjiang provinces. Hearty food.
广东 Guǎngdōng - Southeast. Includes Shenzhen, Guangzhou and Hong Kong. Dim sum and baozis (steamed buns) come from here. Many Chinatowns in the U.S. are filled with people from Hong Kong, so the restaurants there are better at cooking this type of food.
湖南 Húnán - Spicy.

上海 Shànghǎi - Tends to be sweet.
四川 Sìchuān - Numb and spicy.
台湾 Táiwān - Known for having excellent food. When Mao Zedong came to power in mainland China, many wealthy anti-communists were expelled to Taiwan. Many of these people had their own personal chefs, whose culinary skills helped shape Taiwanese cuisine as we know it today.
